Banana Bread

This low-fat banana loaf is not just a tasty treat but also a fertility booster, thanks to bananas' rich nutrients that enhance sperm production. Perfect for breakfast or a healthy snack! 🍌


Ingredients

  • Low-fat spread (for greasing and serving)
  • 140g wholemeal flour
  • 100g self-raising flour
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 300g mashed bananas (overripe, black bananas work best)
  • 4 tbsp agave syrup
  • 3 large eggs, beaten with a fork
  • 150ml low-fat natural yogurt
  • 25g chopped pecans or walnuts (optional, for added crunch)

Ingredients

  1. Preheat the Oven: Heat your oven to 160°C/140°C fan/gas mark 3. Grease a 2lb loaf tin and line it with baking parchment, letting the parchment extend 2cm above the tin.
  2. Prepare the Dry Ingredients: In a large bowl, mix the flours, bicarbonate of soda, baking powder, and a pinch of salt.
  3. Combine the Wet Ingredients: In another bowl, mash the bananas and mix in the agave syrup, beaten eggs, and yogurt.
  4. Mix It All Together: Quickly stir the wet mixture into the dry ingredients. Pour the batter into the prepared tin. Scatter the nuts on top if using.
  5. Bake: Bake for 1 hour 10 minutes to 1 hour 15 minutes, or until a skewer inserted into the center comes out clean.
  6. Cool and Serve: Allow the loaf to cool in the tin on a wire rack. Serve warm or at room temperature, spread with a bit of low-fat spread if desired.
