Ingredients

  • 2 salmon filets
  • 15 small potatoes
  • 3 large beets
  • 4 large garlic cloves, minced
  • ¾ of a large lemon, juiced
  • ¾ tsp sea salt
  • ¾ cup extra virgin olive oil
  • 1 tbsp finely chopped sweet basil
  • 1 tbsp lemon zest
  • 1 tbsp finely ground black peppercorns
  • Olive oil for brushing

Instructions

  1. Prepare the Salmon: In a shallow dish, combine ground black pepper, lemon zest, and ¼ teaspoon of sea salt. Brush the salmon filets with a little olive oil, then press them (skin side down) into the lemon-pepper mixture. Set aside to marinate.

  2. Boil the Potatoes: Boil the washed potatoes over high heat for about 20 minutes or until tender. Drain and set aside.

  3. Make the Dressing: In a small bowl, whisk together extra virgin olive oil, ½ teaspoon of sea salt, chopped basil, and lemon juice. Set aside for later use.

  4. Grill the Salmon: Preheat the grill and barbecue each salmon filet, starting with the skin side down. Grill for about five minutes before gently flipping and grilling until it reaches your desired doneness.

  5. Serve: Plate the grilled salmon filets and serve with boiled potatoes, roasted beets, and the lemon-basil dressing for a nutrient-packed meal that supports male fertility.
