Chicken and Pumpkin Couscous

- 100g instant couscous

Instructions

- Heat olive oil in a saucepan over low–medium heat.
- Add the chopped onion, diced chicken, and diced pumpkin to the pan.
- Cover and cook, stirring occasionally, for about 5 minutes or until the onion is soft.
Step 2: Simmer
- Pour in the chicken or vegetable stock and bring to a boil.
- Reduce the heat and simmer for about 8 minutes, or until the pumpkin is tender.
Step 3: Add Couscous
- Remove the pan from heat.
- Stir in the instant couscous, cover the pan, and set aside for 6 minutes until the liquid is absorbed.
- Fluff the couscous with a fork and stir in the coriander or parsley if desired.
Step 4: Serve
- Serve the chicken, pumpkin, and couscous mixture as is, or with a side of garden salad or steamed vegetables for a more filling meal.
