Chicken, Chili and Avocado Salad

- 2½ cups mixed salad greens
- ½ Lebanese cucumber, sliced
- 1 cup bean sprouts
- ½ avocado, peeled and sliced
- 6 cherry tomatoes, halved
- ¼ cup dry roasted peanuts, for topping

Cook the Chicken. Heat a splash of olive oil in a pan over medium-high heat. Add the chicken tenderloin pieces and cook for 4–6 minutes until thoroughly cooked. Transfer to a large bowl.
