Chicken, Chili and Avocado Salad

Avocado, known as the "fertility fruit," and omega-3 fatty acids make this chicken salad a delicious and nutrient-rich option for supporting both male and female fertility. Perfect as a light yet satisfying meal! 🥗🍗


Ingredients (Serves 4)

  • 3 tbsp olive oil (+ extra for cooking)
  • 550g chicken tenderloins, cut into bite-sized pieces
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp sugar
  • ½ small chili, finely chopped (optional)
  • 2½ cups mixed salad greens
  • ½ Lebanese cucumber, sliced
  • 1 cup bean sprouts
  • ½ avocado, peeled and sliced
  • 6 cherry tomatoes, halved
  • ¼ cup dry roasted peanuts, for topping

Instructions

  1. Cook the Chicken. Heat a splash of olive oil in a pan over medium-high heat. Add the chicken tenderloin pieces and cook for 4–6 minutes until thoroughly cooked. Transfer to a large bowl.

  2. Prepare the Dressing. In a small jar, combine extra olive oil, fish sauce, lime juice, sugar, and chili (if using). Shake well to mix.

  3. Assemble the Salad. Pour the dressing over the cooked chicken and toss to coat. Add the salad greens, cucumber slices, and bean sprouts. Stir well to combine.

  4. Plate and Garnish. Transfer the salad to a serving plate. Top with avocado slices, cherry tomatoes, and peanuts for added crunch and flavor.
