Coconut Shrimp Curry

This Coconut Shrimp Curry is a flavorful, nutrient-packed dish that’s perfect for boosting male fertility. Ingredients

For the Shrimp Marinade:

  • 1–2 lbs large or extra-large shrimp, peeled and deveined

For the Sauce:

  • 1 tbsp canola oil
  • 1 medium red or yellow onion, finely chopped
  • 1 tsp ground black pepper
  • 1 tbsp minced fresh ginger (about a 1-inch piece, peeled)
  • 1 tbsp kosher salt
  • 2 garlic cloves, finely minced
  • 2 tsp ground coriander
  • 1/2 tsp turmeric
  • 1 tsp curry powder
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 can coconut milk (light or regular)
  • 1 cup fresh cilantro, chopped
  • Hot cooked rice (for serving, optional)

Instructions

Shrimp Marinade:

  1. In a resealable bag or bowl, combine shrimp with salt, black pepper, cayenne pepper, and lemon juice. Toss well to coat.
  2. Marinate in the refrigerator for 15–20 minutes.

Sauce:

  1. Heat canola oil in a medium pot over medium heat until shimmering.
  2. Add the onion and cook for 2–3 minutes, stirring occasionally.
  3. Stir in the black pepper, ginger, kosher salt, garlic, coriander, turmeric, and curry powder. Cook for 5–7 minutes, stirring frequently, until the mixture is fragrant and the onion is soft and translucent.
  4. Add the diced tomatoes and cook for about 1 minute, stirring and scraping any browned bits from the pot. Increase heat to medium-high and simmer for 5–10 minutes, stirring often.
  5. Stir in the coconut milk and bring to a boil.

Cooking Shrimp:

  1. Add the marinated shrimp and any accumulated juices to the pot. Bring the curry to a simmer and cook for 2–4 minutes, until the shrimp are curled, pink, and cooked through.
  2. Stir in the cilantro.

Serve:

  1. Ladle the curry over hot cooked rice, if desired. Pair with naan bread for an indulgent treat.
