Ingredients (Makes 8 Servings)
- 1 ½ cups heavy cream
- ⅛ small onion, minced
- 1 tbsp butter
- Salt and pepper, to taste
- 1 lb. jumbo lump crabmeat
- 1 small garlic clove, minced
- ½ small celery rib, minced
- 1 egg
- ¼ green apple, peeled and diced
- 1 tsp minced chives
- 1 tsp minced parsley
- ½ tbsp Old Bay Seasoning
- ½ tbsp Worcestershire sauce
- ½ tbsp Tabasco sauce
- ½ tbsp mayonnaise
- 1 tsp lemon zest
- 1 tsp lemon juice
- 2 tbsp panko breadcrumbs
- Canola oil
- 2 Ritz crackers, crushed
Instructions
1. Prepare the Cream and Onions
- Reduce heavy cream by 2/3 in a medium pot over medium-low heat (15–20 minutes). Remove from heat and cool.
- In a small pan over medium-low heat, melt the butter. Add onions, season with salt and pepper, and cook until translucent (4–5 minutes). Remove from heat and cool.
2. Mix the Crab Cake Ingredients
- In a large bowl, combine:
- Crabmeat
- Garlic, celery, egg, apple, chives, parsley
- Old Bay Seasoning, Worcestershire, Tabasco, mayonnaise
- Lemon zest, lemon juice, and panko breadcrumbs
- Add the cooked onions and gradually mix in the reduced cream until the mixture holds together (you may not use all the cream).
3. Shape and Cook the Crab Cakes
- Shape the mixture into 8 4-ounce patties.
- Preheat the oven to 350°F. Heat 2 tbsp canola oil in a large skillet over medium-high heat.
- Sear each patty for about 2 minutes per side until golden brown.
4. Bake
- Transfer the seared crab cakes to a baking sheet and bake for 5 minutes or until warmed through.
