Ingredients (Serves 6)

  • 1 cup cooked rice, warm or at room temperature
  • 1 cup cooked, shredded chicken (or other leftover meat like shredded pork or beef)
  • 1 can black beans, rinsed and drained
  • 1 green onion, finely sliced (white and green parts)
  • 1/2 red or green pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1/2 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic salt
  • 2 cups shredded cheese (Monterey jack and sharp cheddar combination recommended)
  • Sour cream (optional)
  • 6 burrito-sized flour tortillas

Instructions

  1. Prepare the Filling. In a large bowl, mix the cooked rice with chili powder, cumin, and garlic salt. Add the black beans, green onion, red or green pepper, cilantro, and lime juice. Stir to combine.

  2. Assemble the Wraps. Place the shredded cheese on each tortilla, leaving a 1/2-inch border around the edges. Add a generous portion of the chicken and rice mixture down the center of each tortilla. (Optional: Add a small dollop of sour cream for extra creaminess before adding the filling.)

  3. Roll and Cook the Wraps. Roll the tortillas tightly, leaving the edges open, then lightly flatten the wraps with your palm. Spray the seam-side with cooking spray and heat a large non-stick skillet or griddle over medium heat for 1 minute. Place the wraps seam-side down in the skillet and cook for 2-3 minutes per side, until golden brown and crispy. Repeat with remaining wraps.

  4. Serve and Enjoy. Serve the wraps warm for a delicious and crunchy meal.
