- Salt and pepper, to taste
- 4 leaves butter lettuce
- 4 thick slices tomato
Instructions
1. Make the Herb Aioli:
In a medium bowl, combine the mayonnaise, garlic, lemon juice, parsley, tarragon, chives, and lemon zest. Stir well and refrigerate until ready to use.
2. Cook the Canadian Bacon:
In a large skillet, melt the butter over medium heat. Add the Canadian bacon and cook each side until slightly caramelized, about 5 minutes per side. Transfer the cooked slices to a plate lined with paper towels to drain excess grease.
3. Fry the Eggs:
Lower the heat of the skillet to medium-low. Add the eggs and cook to your desired firmness. Just before the eggs are done, place a slice of American cheese over each egg and let it melt, about 30 seconds. Then, remove the pan from the heat.
