- 140g courgettes (zucchini), grated
- 3 medium eggs
- 85g broccoli florets, finely chopped
- Small pack dill, roughly chopped
- 3 tbsp gluten-free flour or rice flour
- 2 tbsp sunflower oil, for frying
Instructions
1. Prepare the Vegetables
- Grate the courgettes, then squeeze out excess moisture using your hands or by twisting them in a clean tea towel.
2. Mix the Batter
- In a bowl, beat the eggs and add the chopped broccoli, grated courgettes, and most of the chopped dill.
- Stir in the flour and mix until well combined. Season with salt and pepper to taste.
3. Fry the Fritters
- Heat sunflower oil in a non-stick frying pan over medium heat.
- Use a large spoon to place three portions of the mixture into the pan, forming fritters.
- Cook for 3–4 minutes on one side until golden brown and firm enough to flip. Flip and cook the other side until golden.
4. Repeat
- For the next batch, no need to add more oil. Repeat the frying process to make three additional fritters.
5. Serve
- Scatter the remaining dill over the fritters before serving.
