Halloumi Burger

Skip the beef and spotlight halloumi in this mouthwatering recipe. Its firm texture and salty, savory flavor make it a perfect meat substitute for a grill-ready burger that shines all on its own. With a zesty marinade, lemony aioli, and fresh toppings, this isn’t just a cheeseburger—it’s a cheese burger.


Ingredients

For the Halloumi & Marinade

  • 2 blocks halloumi cheese, halved
  • 1 shallot, minced
  • 2 large garlic cloves, minced (divided use)
  • Juice of 1 lemon, plus 1 ½ Tbsp
  • 2 Tbsp finely chopped parsley (divided use)
  • ¼ cup extra virgin olive oil

For the Lemon Aioli

  • ½ cup mayonnaise
  • 1 garlic clove, minced
  • 1 ½ Tbsp lemon juice
  • 1 Tbsp chopped parsley
  • Salt and freshly ground black pepper, to taste

For Assembly

  • 1 cup shredded Romaine lettuce
  • 4 tomato slices
  • 1 avocado, quartered and sliced thin
  • 4 burger rolls (preferably brioche)

Instructions

Step 1: Marinate the Halloumi

  1. In a sealable container, mix shallot, 1 minced garlic clove, juice of 1 lemon, 1 Tbsp parsley, and olive oil.
  2. Add the halloumi, turning to coat each piece. Seal and refrigerate overnight for maximum flavor.

Step 2: Prepare the Lemon Aioli

  1. In a medium bowl, combine mayonnaise, remaining minced garlic, 1 ½ Tbsp lemon juice, and 1 Tbsp parsley.
  2. Season with salt and pepper to taste, mixing well.

Step 3: Grill the Halloumi

  1. Preheat your grill to medium, direct heat.
  2. Remove halloumi from the marinade, season with salt and pepper, and grill until golden grill marks form, about 2 to 4 minutes per side. Return the grilled halloumi to the reserved marinade to soak in more flavor.

Step 4: Toast the Buns

  1. Toast the burger buns on the grill until just crispy, about 1 minute.

Step 5: Assemble the Burgers

  1. Spread 1 Tbsp lemon aioli on the bottom half of each bun.
  2. Layer with Romaine lettuce, a tomato slice, grilled halloumi, and avocado slices.
  3. Top with the other half of the bun and serve immediately.
