Kale Tabbouleh

This refreshing and nutrient-packed salad combines the benefits of kale, bulgur wheat, and feta cheese, making it an ideal choice for supporting male fertility.


Ingredients (Serves 4)

  • 100g bulgur wheat
  • 100g kale
  • Large bunch of mint, roughly chopped
  • Bunch of spring onions, sliced
  • ½ cucumber, diced
  • 4 tomatoes, deseeded and chopped
  • Pinch of ground cinnamon
  • Pinch of ground allspice
  • 6 tbsp olive oil
  • Juice and zest of ½ lemon
  • 100g feta cheese, crumbled
  • 4 Baby Gem lettuces, leaves separated, for serving

Ingredients

1. Prepare the Bulgur Wheat

  • Place the bulgur wheat in a heatproof bowl and just cover with boiling water. Cover with cling film and set aside for 10-15 minutes until tender.

2. Chop the Kale

  • Place the kale in a food processor and pulse until finely chopped.

3. Combine the Ingredients

  • Stir the chopped kale, mint, spring onions, cucumber, and tomatoes into the bulgur wheat.
  • Season with a pinch of ground cinnamon and allspice, then drizzle with olive oil and lemon juice to taste.

4. Add Feta and Serve

  • Scatter the lemon zest and crumbled feta cheese over the salad.
  • To serve, spoon the salad onto Baby Gem lettuce leaves for a fresh and light wrap.
