Lentil and Spinach Soup

Boost your fertility with this delicious, calcium-rich lentil and spinach soup! Packed with vital nutrients, this soup is as comforting as it is healthy.


Ingredients

  • 3/4 cup masoor dal (split red lentils), washed and drained
  • 1 cup chopped spinach (palak)
  • 2 garlic cloves, crushed
  • 1/2 cup sliced onions
  • 1 1/2 cups roughly chopped tomatoes
  • 1/2 cup milk
  • 1/2 tsp chili powder
  • Salt, to taste

For Serving

  • Whole wheat bread sticks

Instructions

  1. Dry Roast Aromatics. In a pressure cooker, combine garlic and onions. Dry roast on medium heat for a few seconds to release their flavors.

  2. Cook the Lentils. Add chopped tomatoes, masoor dal, and 2 cups of water. Mix well and pressure cook for 2 whistles. Let the steam escape naturally before opening the lid.

  3. Blend into Purée. Once cooled, blend the mixture until smooth.

  4. Simmer the Soup. Transfer the purée to a deep pan. Add milk, chili powder, spinach, salt, and 1 cup of water. Bring the soup to a boil and cook for 1–2 minutes on medium heat, stirring occasionally.

  5. Serve Hot. Pair with whole wheat bread sticks for a hearty meal.
