Lentil and Spinach Soup

Ingredients
- 3/4 cup masoor dal (split red lentils), washed and drained
- 1 cup chopped spinach (palak)
- 2 garlic cloves, crushed
- 1/2 cup sliced onions
- 1 1/2 cups roughly chopped tomatoes
- 1/2 cup milk
- 1/2 tsp chili powder
- Salt, to taste

- Whole wheat bread sticks
Instructions

Dry Roast Aromatics. In a pressure cooker, combine garlic and onions. Dry roast on medium heat for a few seconds to release their flavors.

Cook the Lentils. Add chopped tomatoes, masoor dal, and 2 cups of water. Mix well and pressure cook for 2 whistles. Let the steam escape naturally before opening the lid.

Blend into Purée. Once cooled, blend the mixture until smooth.

Simmer the Soup. Transfer the purée to a deep pan. Add milk, chili powder, spinach, salt, and 1 cup of water. Bring the soup to a boil and cook for 1–2 minutes on medium heat, stirring occasionally.

Serve Hot. Pair with whole wheat bread sticks for a hearty meal.
