Marinated Lamb Chops with Watermelon, Haloumi & Mint Salad

This flavorful dish combines tender marinated lamb chops, rich in arginine and zinc, with a refreshing watermelon salad packed with vitamin C. These ingredients are known to support sperm production and male fertility, making this recipe a great choice for a nutritious, fertility-boosting meal.


Ingredients

For the Lamb Chops

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 2 stalks rosemary, sprigs removed, finely chopped
  • 8 midloin lamb chops, trimmed

For the Watermelon Salad

  • 250g haloumi, cut into 1cm thick slices
  • 1/4 cup mint leaves, torn
  • 1 tbsp baby capers
  • 1 kg seedless watermelon, rind removed, cut into 3cm cubes
  • 1 small red onion, finely chopped
  • Salt and pepper, to taste

Instructions

Step 1: Marinate the Lamb

  1. In a jug, combine 1 tbsp olive oil, red wine vinegar, and chopped rosemary.
  2. Lay the lamb chops in a ceramic dish and pour the marinade over them. Turn the chops to coat well.
  3. Cover and let the chops marinate for 30 minutes to absorb the flavors.

Step 2: Prepare the Haloumi Salad

  1. Brush the haloumi slices with olive oil.
  2. Heat a chargrill pan over medium-high heat and cook the haloumi for 2 minutes on each side, or until golden.
  3. Remove the haloumi from the pan and allow it to cool slightly. Tear it into pieces.
  4. In a jug, combine the remaining olive oil, mint leaves, lemon juice, and capers. Season with salt and pepper to taste.
  5. In a large salad bowl, combine the watermelon cubes, chopped red onion, and haloumi pieces. Drizzle the prepared dressing over the salad and toss gently to combine.

Step 3: Grill the Lamb Chops

  1. Preheat a barbecue chargrill or frying pan over medium-high heat.
  2. Grill the lamb chops for about 3 minutes on each side for medium-rare, or until they reach your desired level of doneness.

Step 4: Serve

  1. Plate the grilled lamb chops and serve them alongside the watermelon, haloumi, and mint salad.
