Marinated Lamb Chops with Watermelon, Haloumi & Mint Salad

Instructions
Step 1: Marinate the Lamb
- In a jug, combine 1 tbsp olive oil, red wine vinegar, and chopped rosemary.
- Lay the lamb chops in a ceramic dish and pour the marinade over them. Turn the chops to coat well.
- Cover and let the chops marinate for 30 minutes to absorb the flavors.
Step 2: Prepare the Haloumi Salad
- Brush the haloumi slices with olive oil.
- Heat a chargrill pan over medium-high heat and cook the haloumi for 2 minutes on each side, or until golden.
- Remove the haloumi from the pan and allow it to cool slightly. Tear it into pieces.
- In a jug, combine the remaining olive oil, mint leaves, lemon juice, and capers. Season with salt and pepper to taste.
- In a large salad bowl, combine the watermelon cubes, chopped red onion, and haloumi pieces. Drizzle the prepared dressing over the salad and toss gently to combine.
Step 3: Grill the Lamb Chops
- Preheat a barbecue chargrill or frying pan over medium-high heat.
- Grill the lamb chops for about 3 minutes on each side for medium-rare, or until they reach your desired level of doneness.

- Plate the grilled lamb chops and serve them alongside the watermelon, haloumi, and mint salad.
