Not-Your-Average Sweet Potato Fries

Bored with the usual baked fries? This recipe from Chef Brandon Sharp of the Michelin-starred Solbar in Calistoga, CA, adds a sweet-and-smoky twist. Packed with Vitamin A, these sweet potato fries not only deliver on flavor but also promote male fertility, making them a healthier alternative to traditional fries.


Ingredients

  • 3 garnet yams
  • 2 tsp smoked Spanish paprika
  • 2 tsp brown sugar
  • 1 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 3 tbsp canola or vegetable oil

Instructions

1. Prep and Pre-Bake

  1. Preheat your oven to 325˚F.
  2. Peel the yams and cut them into long ½-inch batons.
  3. Combine the salt, sugar, and spices with oil. Toss the yam pieces in this mixture until evenly coated.
  4. Spread the fries in a single layer on a baking sheet and bake for 12 to 15 minutes or until tender when pierced with a knife.

2. Cool and Freeze

  1. Let the fries cool on the baking sheet.
  2. Transfer them to a second pan lined with wax paper and freeze until solid.

3. Double-Bake for Extra Crispiness

  1. Raise the oven temperature to 450˚F.
  2. Spread the frozen fries in a single layer on a baking sheet.
  3. Bake for about 8 minutes or until golden brown and crisp.

4. Serve

  • Rest the fries on a brown paper bag to absorb any excess oil.
  • Serve immediately with ketchup or a tangy lime-spiked aioli.
