One-Pot Chipotle Chili

Chili Base
- 1 tbsp canola or extra-virgin olive oil
- 1 medium yellow onion, finely chopped

- 1 dried bay leaf

- 1 can (15 oz) black beans, rinsed and drained
- 2 cans (15 oz each) kidney beans, rinsed and drained
- ½ tsp sea salt

- 6 tbsp nonfat Greek yogurt
- 6 scallions, trimmed and thinly sliced
Instructions
Step 1: Prep Ingredients
- Rinse and drain the black and kidney beans.
- Finely chop the onion and bell peppers. Slice the chicken sausage into 1-inch pieces.
Step 2: Build the Chili in the Slow Cooker
- Add the rinsed black beans and kidney beans to the slow cooker.
- Layer in the chopped onions, bell peppers, and sliced sausage.
- Sprinkle in the sea salt, cumin, and chili powder (if using). Toss in the dried bay leaf.
Step 3: Add Liquids and Spice
- Pour in the diced tomatoes (with their juice).
