Prawn, Avocado and Pawpaw Salad

Ingredients (Serves 4)
- 1 red capsicum, cut into quarters, deseeded, membranes removed
- 2 avocados, diced
- ½ pawpaw, peeled, deseeded, and diced
- 3 tbsp coriander, thinly sliced
- 2 tbsp olive oil
- 16 green prawns, peeled, deveined, with tails left intact

Prepare the Capsicum. Place capsicum pieces under a grill and cook until the skins turn black. Remove from the grill and let cool. Once cooled, peel the blackened skins and finely dice the capsicum.

Make the Salad. In a bowl, mix the grilled capsicum, diced pawpaw, avocado, coriander, and 1 tablespoon of olive oil.

Cook the Prawns. Heat a frying pan and add the remaining tablespoon of olive oil. Cook the prawns until golden on one side, then turn and finish cooking.

Assemble the Dish. Divide the pawpaw salad evenly onto four plates, creating a bed in the center of each. Place four prawns on top of each salad bed.

Season to Taste. Add salt and pepper as desired and serve immediately.
