Pumpkin and Chickpea Curry

This hearty, vegetarian pumpkin and chickpea curry is not only delicious but also packed with vitamin E, which is crucial for improving sperm quality and reducing DNA defects. It’s an easy-to-make dinner that’s perfect for supporting fertility while providing a rich, flavorful meal.


Ingredients

  • 1 tbsp vegetable oil
  • 1 brown onion, finely chopped
  • 1 bunch coriander (roots finely chopped, sprigs for garnish)
  • ¼ cup korma curry paste
  • 1.2 kg pumpkin, deseeded, peeled, and cut into 4cm pieces
  • 400ml can coconut milk
  • ½ cup water
  • 400ml can chickpeas, drained and rinsed
  • ½ cup salted cashew nuts, roughly chopped (for garnish)
  • Steamed rice, to serve

Instructions

Step 1: Sauté the Base

  1. Heat vegetable oil in a large non-stick frying pan over medium heat.
  2. Add the chopped onion and cook for 3 minutes or until softened.
  3. Finely chop the coriander roots and add to the pan with the onions. Cook for 1 more minute.
  4. Stir in the korma curry paste and cook for another minute, allowing the aroma to develop.

Step 2: Simmer the Curry

  1. Add the cut pumpkin, coconut milk, and water to the pan. Bring to a boil.
  2. Reduce the heat and let it simmer for 20 minutes, or until the pumpkin is tender.

Step 3: Add Chickpeas and Finish

  1. Stir in the chickpeas and cook for an additional 10 minutes.
  2. Roughly chop half of the remaining coriander and stir it into the curry.

Step 4: Serve

  1. Spoon the curry over steamed rice.
  2. Sprinkle the chopped cashews and coriander sprigs over the top as a garnish.
  3. Serve immediately.
