Roasted Tomato Soup

Ingredients (Serves 4–6)

  • 2 lbs fresh tomatoes
  • 7 cloves garlic, peeled
  • 1 medium white onion, diced
  • 2 carrots, diced
  • ½ cup extra-virgin olive oil
  • 1 tsp cayenne pepper
  • Salt and freshly ground black pepper, to taste
  • 1 quart chicken stock
  • 2 bay leaves
  • 4 tbsp butter
  • ½ cup fresh herbs, chopped (optional)
  • ¾ cup heavy cream (optional)

Instructions

  1. Roast the Tomatoes and Garlic

    • Preheat your oven to 450°F (230°C).
    • Wash, core, and halve the tomatoes. Spread them on a baking tray lined with foil along with the garlic cloves.
    • Drizzle with ½ cup olive oil and season with salt and pepper.
    • Roast for 20–30 minutes, until caramelized and fragrant.
  2. Prepare the Base

    • In a large pot, melt the butter over medium-high heat.
    • Add the diced onion, carrots, and cayenne pepper. Sauté for 3–4 minutes until onions are translucent.
  3. Simmer the Soup

    • Add ¾ of the chicken stock, bay leaves, and the roasted garlic and tomatoes (along with any juices from the baking tray).
    • Bring to a boil, then reduce heat and simmer for 15–20 minutes, allowing the liquid to reduce by one-third.
  4. Blend and Finish

    • Remove bay leaves. Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer to a countertop blender in batches.
    • Return the soup to low heat and stir in heavy cream if desired. Adjust consistency with the remaining chicken stock as needed. Season with salt and pepper to taste.
  5. Serve and Garnish

    • Garnish with fresh herbs and pair with crostini or crusty bread for dipping.
