Sicilian Pasta with Sardines

- 1 large onion, chopped
- 4 garlic cloves, finely chopped
- 1 lb. canned sardines, drained
- Juice from 1 lemon
- 1 pound dried spaghetti
- Salt and pepper to taste
- ½ cup breadcrumbs
Instructions
Step 1: Prepare the Sauce Base
- In a medium bowl, combine the chopped tomatoes, tomato juice, raisins, pine nuts, and saffron. Set aside.
Step 2: Cook the Vegetables
- Heat the olive oil in a large pot over medium heat.
- Add the fennel and cook, stirring occasionally, until translucent and lightly browned, about 10 minutes.
- Add the onion and garlic, and continue cooking, stirring occasionally, until golden, about 8 minutes.
Step 3: Add the Sardines
- Stir in the prepared tomato mixture. Once the sauce reaches a low simmer, add the sardines and lemon juice.
- Use the back of a spoon to mash the sardines into the sauce and cook for about 15 minutes, allowing the flavors to meld together.
Step 4: Cook the Pasta
- While the sauce is cooking, boil the spaghetti until al dente.
- Drain the pasta, reserving 1 cup of pasta water. Add the reserved pasta water to the sauce and then stir in the cooked pasta. Toss well to coat the pasta with the sauce.
Step 5: Finish and Serve
- Season the pasta with salt and pepper to taste.
- Top with breadcrumbs for added texture and serve.
