Smoked Crying Tiger Oysters

Elevate your backyard barbecue game with this unique appetizer that brings the smoky richness of oysters together with a sweet, sour, and spicy Crying Tiger sauce. This dish is not only a delicious addition to any grill session but also supports male fertility with its nutrient-packed ingredients like oysters and coriander.


Ingredients

Crying Tiger Sauce:

  • ½ English cucumber, ends trimmed, halved lengthwise, thinly sliced
  • 1 cup cilantro leaves
  • 4 shallots, thinly sliced
  • 2 Tbsp rice wine vinegar
  • 1 Tbsp cracked coriander seeds
  • 1 Tbsp freshly squeezed lime juice
  • 2 tsp brown sugar
  • 2 tsp fish sauce
  • 1 Thai chili pepper, deseeded, finely chopped

Oysters:

  • 10 medium- to large-sized oysters (e.g., Gold Creek), scrubbed well
  • 2 lb. hickory wood chunks or chips, soaked in water overnight

Instructions

Prepare the Crying Tiger Sauce:

  1. In a medium bowl, combine cucumber, cilantro, shallots, vinegar, coriander seeds, lime juice, sugar, fish sauce, and chili pepper. Mix well until the sugar dissolves.
  2. Reserve sauce. (Can be made a day in advance and stored in the refrigerator.)

Grill the Oysters:

  1. Preheat grill to direct, high heat.
  2. Place soaked hickory wood chunks or chips on the coals or in a smoker box. Close the lid to generate smoke.
  3. Place oysters over direct heat on the grill, close the lid, and smoke until their top shells open, about 4 minutes.

Serve:

  1. Transfer oysters to a plate, discarding any that do not open.
  2. Spoon the Crying Tiger Sauce over the oysters.
  3. Serve immediately. Makes 5 servings as an appetizer.

  • Make it Ahead: The sauce can be prepared the day before to save time.
  • No Grill? No Problem! Use a stovetop smoker or oven broiler for a similar smoky effect.
  • Leftover Ideas: Slice leftover oysters and fold them into soft-scrambled eggs for a rich and indulgent breakfast.
