Smoked Salmon & Lemon Risotto
This delicious risotto combines the richness of smoked salmon with the creaminess of mascarpone, making it a perfect dinner to support male fertility. The addition of fresh herbs and a squeeze of lemon gives it a bright finish.
Ingredients (Serves 2-3)
- 1 onion, finely chopped
- 2 tbsp olive oil
- 350g risotto rice (e.g., Arborio)
- 1 garlic clove, finely chopped
- 1½ liters boiling vegetable stock
- 170g smoked salmon (three-quarters chopped)
- 85g mascarpone lite
- 3 tbsp flat-leaf parsley, chopped
- Grated lemon zest, plus a squeeze of juice
- Handful rocket
Instructions
1. Prepare the Base
- Heat olive oil in a pan and fry the onion for about 5 minutes until soft.
- Add the risotto rice and garlic, cooking for 2 minutes, stirring continuously.
2. Add Stock and Cook
- Pour in a third of the boiling vegetable stock.
- Set a timer for 20 minutes, stirring occasionally. Once absorbed, add half of the remaining stock and continue stirring more frequently until absorbed.
- Add the rest of the stock, stir, and let it simmer until the risotto is creamy and cooked through.
3. Add Final Touches
- Remove from heat and stir in the chopped smoked salmon, mascarpone, flat-leaf parsley, and lemon zest.
- Season with freshly ground black pepper, but avoid adding salt as the smoked salmon provides enough seasoning.
- Let the risotto settle for 5 minutes, then taste and add a squeeze of lemon juice if desired.
4. Serve
- Top the risotto with the reserved smoked salmon (roughly torn) and a handful of fresh rocket.
