Sweetcorn Fritters with Smoked Salmon

These savory corn fritters are packed with arginine-rich corn, which helps to boost sperm count and motility, while the addition of smoked salmon further supports male fertility. This dish is a great, easy-to-make option for breakfast or a satisfying meal at any time of day.


Ingredients

For the Fritters

  • 2 cups (approx. 2 corn cobs) fresh corn kernels
  • 3 spring onions (or 1 small red onion), roughly chopped
  • 2 eggs
  • Small handful coriander (or parsley) leaves
  • 150g self-raising flour
  • Pinch of salt and pepper
  • 1 zucchini, finely grated and squeezed to remove excess moisture
  • Light olive oil, for frying
  • Smoked salmon, to serve
  • Lemon wedges, to serve

For the Avocado Salsa

  • 1 avocado, stone removed and diced
  • 1 tomato, finely diced
  • 1 spring onion, finely chopped
  • 2 tbsp coriander leaves, chopped
  • 1 tbsp lemon juice
  • Pinch of salt and pepper

Instructions

Step 1: Prepare the Fritter Mixture

  1. Place half of the corn kernels, spring onion, eggs, coriander, flour, salt, and pepper into a food processor. Process for 10-15 seconds until combined. Transfer the mixture to a large bowl.
  2. Squeeze the zucchini to remove any excess moisture and add it to the corn mixture, along with the remaining corn kernels. Stir to combine.

Step 2: Cook the Fritters

  1. Heat 1-2 tablespoons of olive oil in a non-stick frying pan over medium heat.
  2. Drop large spoonfuls of the fritter mixture into the pan and cook for 2-3 minutes on one side, until golden brown. Flip and cook the other side for an additional 2-3 minutes, until golden and cooked through.
  3. Drain the fritters on paper towels and set aside.

Step 3: Prepare the Avocado Salsa

  1. In a bowl, combine the diced avocado, tomato, spring onion, coriander, and lemon juice. Season with salt and pepper and lightly stir to combine.

Step 4: Serve

  1. Serve the fritters warm, topped with a spoonful of avocado salsa.
  2. Add slices of smoked salmon and a squeeze of lemon for extra flavor.
