Sweetcorn Fritters with Smoked Salmon

Ingredients
For the Fritters
- 2 cups (approx. 2 corn cobs) fresh corn kernels

- Pinch of salt and pepper
- 1 zucchini, finely grated and squeezed to remove excess moisture

- 1 avocado, stone removed and diced
- 1 tomato, finely diced
- 1 spring onion, finely chopped
- 2 tbsp coriander leaves, chopped
- 1 tbsp lemon juice
- Pinch of salt and pepper
Instructions
Step 1: Prepare the Fritter Mixture
- Place half of the corn kernels, spring onion, eggs, coriander, flour, salt, and pepper into a food processor. Process for 10-15 seconds until combined. Transfer the mixture to a large bowl.
- Squeeze the zucchini to remove any excess moisture and add it to the corn mixture, along with the remaining corn kernels. Stir to combine.
Step 2: Cook the Fritters
- Heat 1-2 tablespoons of olive oil in a non-stick frying pan over medium heat.
- Drop large spoonfuls of the fritter mixture into the pan and cook for 2-3 minutes on one side, until golden brown. Flip and cook the other side for an additional 2-3 minutes, until golden and cooked through.
- Drain the fritters on paper towels and set aside.
Step 3: Prepare the Avocado Salsa
- In a bowl, combine the diced avocado, tomato, spring onion, coriander, and lemon juice. Season with salt and pepper and lightly stir to combine.
Step 4: Serve
- Serve the fritters warm, topped with a spoonful of avocado salsa.
