The Perfect Panini

This elevated panini recipe transforms the classic sandwich into a gourmet delight. Packed with flavor, texture, and nutrients, this dish is both indulgent and fertility-friendly, perfect for a satisfying lunch or dinner.


Ingredients (Makes 2 Sandwiches)

For the Veal:

  • 1 cup all-purpose flour
  • 2 whole eggs
  • 2 cups fine breadcrumbs
  • 2 cups canola oil
  • 1 tsp butter
  • 2 (4-oz.) slices veal shoulder, pounded thin
  • Salt and pepper, to taste

For the Panini:

  • 2 (7"x3") ciabatta loaves, halved
  • 2 Tbsp whole-grain Dijon mustard
  • 2 Tbsp shaved Parmesan
  • Large handful mizuna or arugula leaves

Instructions

  1. Set Up the Breading Station

    • Spread the flour on a plate. In a shallow bowl, whisk the eggs with a pinch of salt. On a second plate, prepare the breadcrumbs.
  2. Prepare the Veal

    • Heat the canola oil and butter in a large skillet over medium heat until the butter melts and bubbles.
    • Season both sides of the veal with salt and pepper. Dredge each piece in flour, then egg wash, and finally breadcrumbs. Shake off excess crumbs.
  3. Pan-Fry the Veal

    • Add breaded veal to the skillet and cook until golden brown, about 2–4 minutes per side. Transfer to a plate lined with paper towels to drain.
  4. Assemble the Panini

    • Spread 1 Tbsp mustard on each half of the ciabatta. Layer mizuna or arugula on the bottom halves.
    • Place a slice of veal on each, then sprinkle with 1 Tbsp Parmesan. Close the sandwiches.
  5. Grill the Sandwich

    • If using a Panini press: Preheat to 300°F. Grill sandwiches until golden brown, about 4 minutes.
    • If using a skillet: Heat a lightly oiled skillet over medium heat. Place sandwiches in the skillet, press down with a heavy skillet, and cook for about 2 minutes per side, until golden brown.
  6. Serve

    • Remove sandwiches from the press or skillet. Slice each in half and serve immediately.
