Tomato Soup With Crab Salad

Ingredients

  • 1 shallot, chopped
  • ½ lemon, juiced
  • 1 lb. fresh crabmeat
  • 1 cup cherry tomatoes, sliced in half
  • 10 fresh basil leaves, chopped

Instructions

Step 1: Prepare the Tomato Soup

  1. In a blender or food processor, combine the heirloom tomatoes, garlic, basil, and sea salt. Blend until smooth.
  2. Slowly drizzle in ½ cup olive oil, continuing to blend until the oil is fully incorporated into the mixture.
  3. Strain the soup through a fine mesh sieve into a bowl to remove seeds and any pulp. Taste and add more salt if necessary.
  4. Refrigerate the soup until chilled.

Step 2: Make the Crab Salad

  1. In a medium bowl, combine the chopped shallot and ½ lemon juice.
  2. Slowly drizzle in the remaining ½ cup olive oil, whisking constantly to combine.
  3. Add the crabmeat, cherry tomatoes, and chopped basil to the bowl. Mix everything gently with your hands.
  4. Season with salt to taste.

Step 3: Serve

  1. Pour the chilled tomato soup into bowls.
  2. Top each bowl with the fresh crab salad, serving immediately.
