Tuna, Mango and Green Bean Salad

This Tuna, Mango, and Green Bean Salad is a delicious and healthy dish packed with amino acids, vitamins, and antioxidants that support male fertility. The tuna provides a rich source of arginine, cysteine, and selenium, all crucial for sperm health. Paired with mango, cherry tomatoes, and green beans, this vibrant salad also provides an abundance of vitamin C, beta carotene, and folic acid.


Ingredients (Serves 2)

  • 1 large handful fresh Asian leaves (rocket or mizuna)
  • 14–16 cherry tomatoes, halved
  • 1 small mango, peeled and diced
  • 1 tbsp coconut oil
  • 100g fine green beans
  • 1 red onion, peeled and finely chopped (optional)
  • 2 medium sushi-grade tuna steaks
  • Salt and pepper, to taste

For the Dressing

  • 75ml extra virgin olive oil
  • Juice of 1 lime
  • 1 handful fresh coriander
  • 1/2 clove garlic, crushed
  • 1 jalapeno pepper, deseeded and finely chopped
  • 1 tbsp maple syrup

Instructions

  1. Make the Dressing

    • Blitz the olive oil, lime juice, coriander, garlic, jalapeno, and maple syrup in a high-powered blender for 20–30 seconds. Pour into a jar and refrigerate.
  2. Prepare the Salad

    • Add the fresh Asian leaves to two separate salad bowls. Toss in the diced mango and halved cherry tomatoes.
  3. Sauté the Green Beans

    • Heat half the coconut oil in a frying pan. Add the red onion (if using) and green beans. Sauté for 2-3 minutes, then divide the mixture between the two salad bowls.
  4. Cook the Tuna

    • Return the pan to high heat with the remaining coconut oil. Add the tuna steaks and sear for about 1 minute on each side, leaving them rare in the middle. Transfer the steaks to a chopping board and slice them.
  5. Assemble the Salad

    • Add the tuna slices to the salad bowls. Drizzle with a little of the prepared dressing.
