Vegetable Frittata

This delicious frittata is packed with essential nutrients, including antioxidants, protein, and healthy fats, all of which help support male fertility. The combination of butternut pumpkin, potatoes, and spinach makes for a hearty, nutrient-dense meal that's perfect for boosting reproductive health.


Ingredients

  • 400g butternut pumpkin, peeled and cut into 2cm pieces
  • 400g desiree potatoes, peeled and cut into 2cm pieces
  • 50g baby spinach leaves
  • 2 tbsp plain flour
  • 300ml cream
  • 4 eggs, lightly beaten
  • 1/3 cup grated parmesan
  • 2 tbsp chopped parsley
  • 100g soft feta, crumbled

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 200°C (392°F).
  2. Line a 20cm springform tin with baking paper and place it on a baking tray.
  3. Steam the butternut pumpkin and desiree potatoes for about 5 minutes or until just tender.

Step 2: Assemble the Frittata

  1. Place the baby spinach leaves into the base of the prepared tin.
  2. Arrange the par-cooked pumpkin and potato pieces over the spinach.

Step 3: Prepare the Egg Mixture

  1. In a bowl, combine the plain flour and cream, whisking gradually until smooth.
  2. Add the eggs, grated parmesan, and chopped parsley, and whisk until fully combined.
  3. Season the mixture with salt and pepper to taste.

Step 4: Bake

  1. Pour the egg mixture over the vegetables in the tin.
  2. Scatter the crumbled feta over the top.
  3. Bake in the preheated oven for 40 minutes, or until the frittata is set and golden.

Step 5: Serve

  1. Let the frittata stand for 5 minutes before removing it from the pan.
  2. Cut into wedges and serve with a fresh salad.
