Veggie Lasagna
This light yet rich veggie lasagna is a comforting, healthy meal perfect for supporting male fertility. It's lower in fat than typical lasagna, making it a delicious, healthier choice.
Ingredients (Serves 4)
- 2 tbsp oil
- 1 onion, sliced
- 1 garlic clove, sliced
- 1 aubergine (eggplant), cut into chunks
- 1 red pepper, sliced
- 8 plum tomatoes, halved
- 350ml passata (tomato puree)
- 200g ready-cooked lasagna sheets
- 6 tbsp half-fat crème fraîche
- 2 tbsp grated parmesan (or vegetarian alternative)
Ingredients
1. Roast the Vegetables
- Preheat the oven to 190°C (fan 170°C / gas mark 5).
- Toss the oil with onion, garlic, aubergine, red pepper, and plum tomatoes. Spread them out on a large shallow tin and roast for 35 minutes, or until the vegetables are lightly charred and softened.
2. Assemble the Lasagna
- Spoon a layer of the roasted vegetables into a medium-sized baking dish.
- Pour some passata over the veggies and cover with a layer of lasagna sheets.
- Repeat the layering process with the remaining vegetables, passata, and lasagna sheets, finishing with a final layer of lasagna sheets.
3. Add Crème Fraîche and Parmesan
- Spoon half-fat crème fraîche over the top layer and sprinkle with grated parmesan.
4. Bake
- Return the lasagna to the oven and bake for 25 minutes, or until the lasagna is heated through and the top is golden and bubbling.
