Quinoa Salad with Avocado and Pumpkin Seeds

Pumpkin seeds are a great source of zinc, which plays a key role in testosterone production and sperm health. Quinoa is a complete protein that provides all the essential amino acids.

Ingredients

- 1 cup cooked quinoa
- 1 avocado, diced
- 1/4 cup pumpkin seeds
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish

Instructions

1. In a large bowl, combine the cooked quinoa, avocado, cherry tomatoes, red onion, and pumpkin seeds.
2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
3. Pour the dressing over the quinoa mixture and toss well.
4. Garnish with fresh parsley or cilantro before serving.
