Method

  1. Prepare the Chicken

    • Place the chicken in a bowl and sprinkle it with the juice of 2½ lemons.
    • Insert the squeezed lemon halves inside the chicken cavity. Cover the chicken with plastic wrap and refrigerate overnight, turning occasionally to marinate evenly.
  2. Season and Roast

    • Preheat your oven to 220°C (200°C for fan-forced).
    • Remove the chicken from the fridge, season generously with salt and freshly ground pepper, and place it on a rack in a baking dish.
    • Scatter the garlic cloves around the chicken and pour white wine into the dish.
  3. Cook to Perfection

    • Roast the chicken for 1 hour, or until nearly cooked.
    • Carefully remove excess fat from the baking dish.
  4. Add Antioxidant-Rich Vegetables

    • Add the artichoke slices, olives, semi-dried tomatoes, and 125ml water (~½ cup) to the dish.
    • Roast for another 20 minutes, or until the chicken is fully cooked and the vegetables are tender.
  5. Serve

    • Carve the chicken into serving pieces and arrange them on a heated platter.
    • Surround with the roasted vegetables and drizzle with the flavorful pan juices.
    • Squeeze the roasted garlic cloves from their skins and enjoy them with the dish for an extra antioxidant boost.
