- Remove the chicken from the fridge, season generously with salt and freshly ground pepper, and place it on a rack in a baking dish.
- Scatter the garlic cloves around the chicken and pour white wine into the dish.

- Roast the chicken for 1 hour, or until nearly cooked.
- Carefully remove excess fat from the baking dish.
